Venison Barbecue

Ingredients:
3 lbs. venison, chopped
1 cup onion, diced
4-5 cloves chopped Garlic
1 cup red wine vinegar
1/2 cup, Worchestershire Sauce
2 tsp. salt
1 lb bacon, fried & crumbled
2 cups catsup
1/2 cup molasses
1/2 cup brown sugar
Directions:
Place venison, garlic,vinegar, Worcestershire Sauce,salt and onion in a 12" Dutch oven. Simmer for 1-2 hours or until venison is tender. Use 20 charcoal briquettes for the outdoor cooking of this recipe with charcoal as your fuel. Place 6 lit briquettes on top and 14 underneath your Dutch oven. Replace your coals about every 30-40 minutes. You may need more coals in windy or cold weather.
Fry bacon till crisp. Let it cool and then crumble it. Add the bacon, catsup molasses and brown sugar to the Dutch oven. Slow simmer for another 1-2 hours.
Serve over white rice or mix in cooked white rice before serving. If venison is unavailable try bison meat. Both meats are very lean and a great source of protien.
