Italian Sausage Casserole
Here is a dish that was inspired by that great smell of Italian sausage sandwiches cooking at local fairs and carnivals. A crowd pleasing Dutch oven recipe, feel free to enjoy this casserole any time of year!
Ingredients:
1 tablespoon Olive Oil
1 lb ground Italian sausage
1 cup onion, chopped
½ c chopped green bell pepper
½ c red bell pepper, chopped
2 cloves garlic
1 loaf Italian bread in 1” cubes
2 cups mozzarella cheese, shredded
2 cans evaporated milk
4 large eggs
1 tsp salt
½ tsp black pepper
½ tsp oregano
½ tsp basil
½ tsp marjoram
Directions:
In a pre-heated Dutch oven, sauté Italian sausage, vegetables and garlic until sausage is no longer pink. Be sure to break up the sausage while stirring. Drain fat when done and mix in the bread cubes. In a separate bowl combine evaporated milk, eggs and spices. Pour mixture over the meat, vegetable and bread in the Dutch oven. Press down on the mixture with the back of a spoon to help the bread soak up the liquid. Cover and bake at 350º for about ½ hour or until mixture has set. Use 24 charcoal briquettes for the outdoor cooking of this recipe with charcoal as your fuel. Place 15 lit briquettes on top and 9 underneath your Dutch oven. You may need more coals in windy or cold weather. This is a good one for breakfast or for dinner!
