Easy Dutch Oven Meat Loaf
Here is a from-scratch meat loaf recipe that tastes great and is all too simple to make. You will find this recipe is great for Dutch oven cooking at camp or at home and is ideal for teaching aspiring young chefs how to prepare an old-time favorite comfort food. Serve with potatoes and a vegetable on the side for a well balanced Dutch oven meal.
Ingredients:
1½ - 2 lbs. meat loaf mix (beef, pork and veal)
1 egg, beaten
¼ cup gluten free breadcrumbs
¼ cup cooked rice
2 tbs. grated Parmesan cheese
1 tsp. dried Italian herb seasoning
½ tsp. onion powder
½ tsp. garlic powder
1 tsp. salt
½ tsp. ground pepper
1 tsp. balsamic vinegar
Ketchup
Directions:
Mix all of the above ingredients except the ketchup together in a bowl. Do not over work beef/pork/veal mixture, you want to maintain the ground meat texture. Remove the mixture from the bowl and form it into a loaf shape. Place the meat loaf into a 12" Dutch oven then cover the top of the loaf with ketchup.
Cover the Dutch oven and cook at 350° for 45 minutes to 1 hour being careful not to over-cook. For camp cooking with charcoal use 24 charcoal briquettes. Place 15 lit briquettes on top and 9 underneath your Dutch oven.
